I'm looking to buy a new sailboat; a longer boat is generally quicker, whilst a wider boat is more stable... What's your opinion?

My professional opnion is that your boat is going to be a mixture of both.

Girth, any time. Not only does it add stability , but it makes docking so much easier. With length, you're banging and bobbing around for the right place to enter the dock.

Now with girth, slipping into the right place and holding fast after docking is a much better way to go. It seems as if the pier is just holding you there without any help from ropes (while not a bad thing) or accessories.

you have to factor in your goal:
how fast do you want to go?
Do you want to be able to go deep in the ocean, or just stay around the edges a little?
will you have help handling it or are you going at it alone?

These things are important when deciding the length and girth.
And don't forget about performance. Whichever performs best for you, that's what I would go with.
