In high school...Independent living.
Would cover things such as paying bills, taxes, how to manage your money, credit cards, bank accounts, everything about mortages, business scams, etc.
You can't beat learning through EXPERIENCE, that's the best teacher one can have, but it may also be useful for kids to learn how to be independent and rely on themselves, part of why some stay with their parents way into their adult years is because of lack of knowledge of these matters, fear and in large part, laziness.
But, as I always say, to each his or her own.
I also think they should teach the basics of certain cultures, just so kids would be a bit more educated on the rest of the world.

I remember back in high school, the math department was always saying there should be a class called "Window". This class would teach students how to use the Window button on the TI-83 calculators, simply because only a small number of students actually knew how to use this button properly. And, before you say anything, I know how to use the Window button properly.

money management...from elementary school upwards, obviously altering its focus. I think its especially important for kids in high school to understand how to balance a check book, be responsible for credit cards and other bills that kids who just graduate are often faced with. Many many parents fail to teach their kids these essential lessons, and they are just that...essential

Wisdom. You might say you can't teach that, but I don't agree. You can teach people to put things in perspective, to remain calm and balanced, and to maintain a connection with the natural world.

Sex Education!!! The trouble is, the religious fanatics in the US would rather have their daughters pregnant at age 13, than have a teacher talk to their kids about sex!!!! Why talk about something you're embarrassed about anyway!!!
