Something like this is a matter of taste I would think. You'd have to have a good knowledge of wood of course and where to get it.
I don't know if you'd find a "book" about this other then what you want.

Having the power tools, the knowledge of wood and proper use of tools, material and where to buy it. And, of course, lots of time. Good luck

I have never seen an 18 foot cabin cruiser. Do you mean a cuddy cabin? Before you go tackling such a project you should search for all the information possible. How do you know the hull is in good condition? Is the transom rotted? Are the through hull fittings properly fit and bedded? Is the electrical wiring sound? Engine mounts solid? Does it have a stuffing box? Is it leaking?

These are just a few of the things that can cause a boat to sink. There are many things that need attention to make sure it is sea worthy.
