Lord of the Rings -- JRR Tolkien (Granddaddy of Fantasy as we know it)
The Chronicles of Thomas Covenant - Stephen Donaldson (Darker Fantasy -- Like it coz there's no elves)
The wheel of time - Robert Jordan (Lots of battles, good characters)
A song of ice and fire -- Geroge RR Martin (Lots of knights and battles, not light reading - be warned)
Anything by David Gemmel (Real world character types)
Magician -- Raymond Feist (self explanatory)

If you liked Harry Potter, then you will also like His Dark Materials trilogy by Philip Pullman. The individual books are The Golden Compass, The Subtle Knife and The Amber Spyglass. It's got mysticism, fantasy aspects with "Daemons" and evil forces trying to over come the good. I don't think you will be disappointed. It's similar to Harry Potter in the fact that the story could take place today in an alternate world. Its very cool. Happy Reading.

Trickster's Choice and its sequel Trickster's Queen by Tamora Pierce were amazing.
Poison by Chris Wooding was very much like a Gail Carson Levine book (which is another author to look at), and was also amazing.
In Old Magic, by Marianne Curley, they're trying to get rid of a curse by going back in time with the help of magic. It's really good.
There are tons more, but if you want more, you can go to bn.com and see what people who have read the same books as you recommend.

I highly recommend "Maximum Ride" by James Patterson...children with wings genetically engineered. It is a series that has 3 books so far and I anticipate more. Prior to writing these 3 books he wrote "When the Wind Blows" and "The Lake House" which are similar. Instead of telling you the plot outline in detail just go to www.maximumride.com and watch the trailer on the home page. It is really cool. I read all three books in about 4 days. They are supposed to be making a movie.

This year I'm into dragons. Right now I'm reading Throne of Jade (Temeraire series by Naomi Novik) & Song in the Silence by Elizabeth Kerner. Before that I read the Age of Fire books by E E Knight & DragonKin(first book) by Robin Wayne Bailey(need to still read the 2nd and 3rd).
For fantasy overall, I enjoyed Terry Brooks' "Kingdom of Landover" series, it's 5 books about a rich businessman who purchases a magical realm from a magazine. They're enjoyable.

Russian Author Sergei Lukyanenko's Watch Tetralogy, about the struggles between light and dark, pretty great stuff IMHO. The movies have been pretty nicely done thus far as well. It consists of Night Watch, Day Watch, Twilight Watch and Final Watch.

One of my favorites is "Mists of Avalon" by Marion Zimmer Bradley. It's a take on the King Arthur tale, but much more from a woman's perspective. It mainly deal with Morgaine, Arthur's sister, and the druids and priestesses around at that time. I've read it twice and loved it.
