Race is a creation of the Roman Catholic Church. I think heritage is a much kinder word.

Acadia was French territory in what was to become Canada and New England. When the English captured it, they gave the French residents an ultimatum to transfer their allegiance to England or leave.
Those who left traveled south to Louisiana. 'Acadian' became 'Cajun.' Their ethnicity is French.
In Louisiana, Creole means anyone whose family was there before the Louisiana Purchase, often of French or Spanish heritage, or from the French Caribbean, sometimes mixed in with African and/or Native American.
The main distinction between the two is where someone's French ancestors first settled in North America.

Cajuns are simply French people who settled especially down in southern Louisiana; therefore, they're like a big chuck of the population in America. They're Americans who came from Europe. You don't have White in your list, but that's the way I'd classify them. Creoles are a mix of European and African and Caribbean. So out of the choices you've provided, I'd have to say mixed or other. I'm proud to say I have both Cajuns and Creoles in my family tree!

Maybe a mixed thing going on, but since you said Creole, I think maybe distant French or some type of European territory or something. I don't really know how to word it.
