Cajuns are simply French people who settled especially down in southern Louisiana; therefore, they're like a big chuck of the population in America. They're Americans who came from Europe. You don't have White in your list, but that's the way I'd classify them. Creoles are a mix of European and African and Caribbean. So out of the choices you've provided, I'd have to say mixed or other. I'm proud to say I have both Cajuns and Creoles in my family tree!
