Actually it should be a mixture of water and antifreeze. It circulates around inside the engine and the radiator and keeps the engine from overheating. It the winter, the warm water and antifreeze is used to heat the inside of the passenger compartment

A car engine creates large amounts of friction due to all the moving parts. The friction is the main source of heat which is cooled by water or your engine stops and gets real expensive. Your cooling system builds up pressure due to the heat which is why they put Warning labels on the radiator caps! Do not try to remove while hot without releasing pressure or something like that. You also want to keep an additive in your water to prevent rust. Most brands of anti-freeze have a rust preventive. The engine oil helps in reducing friction and heat while it displaces some heat.

As someone already noted you have to have windshield washer fluid for your windshield washer and that is in a separate container.

Well there is both windshield fluid that can take water and also the cooling system that takes a mix of water and coolant.

The windshield washer system does just that, washes your windshield.

The cooling system keeps your engine and all it's moving parts and the friction they generate from overheating the metals and other materials. At high temperatures things tend to change shape and size allowing fluids to get places they shouldn't go.
