Go to lawyer. Take with you a copy of the deed showing the property boundaries. If you have any photographs of what the property looked like before the damage, include those.
Ask the lawyer to issue an order to your neighbor to respect your property boundaries, by undoing the work that has violated your property. This needs to include replanting of trees in compensation for those that were stolen and destroyed. Have a copy of this request to go to his builder, because of the cease and desist nature of your demands.
Talk to neighbors on other side of the property. If this was done to you, it might have also been done to them. A joint lawsuit by several of you may be less espensive than you going it alone.
It is reasonable for you to ask that the damage be made good, and that the other side pay all your expenses in getting this done, and some nominal sum of money for the anquish caused your family.

talk to your lawyer/solicitor about it. get them to send a letter on your behalf saying that they did not have your permission to remove the other 6 fence panels, and no right to remove any trees on your property, or dig out the plants. Also say that they need to re-plant some trees, fix the mess, and put back the fence panels you didn't give them permission to take away. ask for money from both the builder and the neighbour to pay for any damage you have had to repair, and also for the stress this caused your mother and yourself. give your lawyer pictures of before and after the damage, if you have any, as well.
it's also a good idea to check with the local council to see if any of the trees were protected, because i know that a lot are given special protection by the council, especially if they were old, or indigenous to that area.

Trees are often protected get in touch with the local Council.
He may be entitled to build up to the trees and then from the other side on the boundary but boundary disputes are very expensive. You must get a copy of your deeds from your mortgager before you do anything otherwise you are peeing in the wind
Your neighbour is a piece of non humanoid dog dirt. You could of course return the compliment but hold your fire until you get advice from a lawyer and/or the council
