The name is the Helm.
This refers to any of them that steer the ship. Many today are small not like the old wooden ones you have seen. They can be as smaller them a dinner plate and are plastic or metal.
A ship's wheel is usually referred to the older wood ones that are about 3 foot across and usually are now hanging up on peoples walls.
