I like Blueberry and here is a great recipe:

3 Cups all-purpose flour
1 Tbs baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

5 Tbs unsalted butter
5 Tbs salted butter
1 cup sugar
2 large eggs
1 1/2 cub plain yogurt (can use regular yoplait blueberry)

1 1/2 cups blueberries
1 Tbs flour

1. Adjust the oen rack to the middle-lower part of the oven. Preheat oven to 375F. Grease muffin pan.

2. Whisk together the flour, baking bowder, baking soda, and salt and set aside.

3. In a mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one.

4 Beat in one half of the dry ingredients until just incorporated. Beat in 1/3 of the yogert. Beat in remaining dry ingredients, then remaining yogert. Fold in blueberries. If using frozen, defrost and coat w/flour.

5. Add to muffin pans and bake for 20 min.

This makes 12 large muffins, you can fill with dough to the top. They rise but will not make a mess or overflow.

oh thx alot for the recipe mine is chocolate chip muffins here is the muffin

1/3 cup light-brown sugar
1/3 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter -- melted and cooled
2 eggs - beaten
1 teaspoon vanilla
1 package (12 oz) chocolate chips
1/2 cup walnuts or pecans -- chopped
Preheat oven to 400 F. and grease up twelve muffin cups.

In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in center of dry ingredients; add milk mixture and stir just to combine. Stir in chocolate chips and nuts.

Spoon batter into muffin cups; bake 15-20 minutes, or until a knife inserted in center of one muffin comes out clean. Remove muffin tin to wire rack; cool 5 minutes and remove from tins to finish cooling.

Serve warm.

I love Lemon Poppy Seed Muffins! Here's a "shortcut" recipe! :-)


LEMON POPPY SEED MUFFINS

1 box lemon cake mix
1 c. boiling water
1/2 c. oil
1 sm. box instant vanilla pudding
4 eggs
1/3 c. poppy seeds

Preheat oven to 425 degrees. Mix all ingredients together. Fill muffin cups about half full. Bake at 425 degrees for 15 minutes. Makes approximately 2 dozen muffins.

That sounds wonderful. Blueberry is my favorite, but I use Jiffy mix. Do you know the muffin man?

i hate muffins..i don't care how they are made.it could be the best muffin on the planet earth..cost $500.00 for a single muffin and i wouldn't care to Even have a bite of it.

can't stand cake.
