I'm gonna have to go with Dr. Dre. So many great albums, The Chronic 1 & 2. Bunch of Snoops, worked with Jay-Z. Many top artists... Hard to find a list of Dre's produced songs cause he doesnt have a website, but Dre is the best.
Timbaland has also worked with Jay-Z a lot, and those are some of my favorite songs that he's produced.
Here are some of my favorite Timbaland produced joints:
Big Pimpin' - Jay-Z. produced in '99.
You Owe Me - Nas. produced in 2000
Snoop Dogg - Snoop Dogg. 2000
Dirt off Your Shoulder - Jay-Z. '03
The Jump Off - Lil' Kim. '03
Hey Now - Xzibit. '04
Wait a Minute - Pussy Cat Dolls. '06
and even though I dont really like Justin Timberlake he's done some hott songs with him.

that is kind of hard, because Dr. Dre does mostly rap, and Timberland does mostly hip hop
