In the UK, "cow" is a derogatory term for a woman. It is used to describe somebody who is stubborn or cruel, or just obnoxious. It can be an insult in the right context, but is usually fairly mild and used amongst friends "Don't be such a cow".
As for why you are a cow, I can't guess.

A cow is like a bull only different.They are both bovine,the cow is female and the bull is male.They are both pretty big too and that is the crux of the thing.You are being called a big,stupid thing.
