i have been enjoying the odd bowl or seven of soft scoop ice cream these past couple of days but instead of really enjoying it,i have been trying to work out what the piece of genius trickery is that makes soft scoop ice cream so easy to dig out of the tub with the spoon

It's the cream, the creamier it is, the softer it becomes, making it difficult for ice crystals to produce.

I hate to burst your bubble, but the magic ingredient is OIL! It also contains twice as much air as regular ice cream, and some contain seaweed.

"Soft scoop is always bad news, it basically means poor ice cream. This doesn’t have any real anything, it’s just a water-sugar oily bulk held together by starches."

Now let me see is the correct answer here going to absolutely thrill you to bits? No I dont think so and it doesnt always come out by just poking a spoon at it either, so much for the magic ingredient huh! In other words I dont know.lol

Soft-serve ice cream is kept soft by churning and is only chilled to about 15-20 degrees Fahrenheit; your freezer is set to about zero. I believe that modern dispensers keep the mixture at just above the freezing point and freeze it while it is in motion as it's being dispensed.

I would usually use an ice cream scoop, but if mine broke like they sometimes do I would use a regular spoon.
