Yes you can, take a wire gauze and make it part of an electric circuit. The more number of parallel gauzes, the better. Fit it into a cylinder which act like a chimney for the smoke.

I am not tried what Joe told. But to make a model of ESP you may need high voltage source(DC supply) two conductors and when you are passing smoke/dust between the conductors will observe it. But difficult is to produce the high voltage DC and needs more safety precautions.
