This is just the way I dealt with it. First of all, I couldn't risk someone "working it off" because if they got hurt, they'd sue me. So I'd say that there's an ATM half a block away and I'd keep their car keys and something else valuable (like a drivers license) until they got back. Worked every time. That way if they never showed up, I could call the cops with name and address. I never got stiffed.

No matter the circumstances,if you don't pay,it's considered "defrauding an inn keeper" under the law and is a crime.Call the police,kidnap a child,lock up the wife,whatever the necessity to insure payment.Obviously if it's a local or very unusual circumstances,other remedies exist.

I've worked in a few restaurants, and we always called the police. Tried to handle it quietly and discreetly, but definitely had them come take care of it. Technically, it is stealing.

They get your driver's license and license plate # and ask you to come back and pay. They don't usually want to call the cops and make a scene or have an unskilled person fooling around doing work in the back.

When I forgot my money at a restaurant, they made me go back home and get the remaining money I didn't have in my with me. They just didn't let me off the hook. Oh well.

I've walked out without paying by accident a couple of times, I alway's remembered, and ran back in to pay AND "Tip", it was met by "Laughter" from the staff !

in some strict countries they call the police ,
some places they really do the dishes,
and in other places they say i will be back and the stupid waiters let him go and never see him again
some places they say write it in my account (lol , since when he had a account)
while in other places they beat the hell outta him
