When my hair gets wet from the rain it always curls as it dries (I'm guessing this is largely due to the humidity) and I was wondering, why is that? What about humidity makes it so responsible for the curly hair effect?

Human hair is a good absorber of moisture direcly from the air itself and it can even be used as a sensor of humidity. In your case ,you are naturally having a curly hair and when it absorbs moisture,it expands and gets straightened. When the hair gets dried, it attains its normal position (ie curly hair).
