i have a 327 that runs hard until the water temp get to about 180 then when you press the gas it run but as soon as you let off the gas it dies.

could be vapor lock or too Lean fuel mixture. valves to tight . bad fuel pump .temp con troll vacuum switch a lot of things could cause same symptoms

Think your timing is off, that will cause it not to idle and cold starts will be hard, may make a "ping" under load also. Means your timing chain has jumped and needs to be replaced. If you get that done at a shop then it will be about $300 but is simple to do yourself and part is only about $50. Could also be carbonation but unlikely.
