You shouldn't.
First- civil divorce is not recognized by the Church. Marriage is forever as in the vows you took- remember? "As long as we both shall live."
A divorced person cannot remarry in the Catholic Church unless it is proven that the first marriage lacked something essential- that it was invalid. (This does not affect any children)
If a divorcee remarries- or even DATES, it is considered adultery because they are still considered married.
Marrying in a methodist church doen't change that. In fact, it makes it even worse, because the Catholic is not keeping the marriage laws- laws that are designed to protect the sanctity of marriage.
The person you describe would be living in adultery, a state of objective mortal sin, and causing scandal.
They would not be able to receive the Eucharist.

Considering the Methodist church allow gay clergy I don't think they will have a problem with a divorced Catholic. Check with the individual church and it's pastor.
****A side note that has nothing to do with your question! I am a wedding photographer and if you are not a member of said Methodist church I would find a different denomination to have the wedding. I have not photographed a wedding in a Methodist church in the last five years that kept the wedding pictured in mind. We are very professional and never use flash during any ceremony but the Methodist churches go a bit further and many won't allow us in the sanctuary at all. We get the worst pics in those churches. Last week we shot in one and they wouldn't even let us photograph the professional or recessional inside the church. Find a nice Baptist or Brethren church! (Then again, if you are a member, just make the best of it and grovel with the pastor to let the photographer get what he can! Sometimes they relent!)

It all depends on if you plan on retaining your Catholic identity. This marriage will not be recognized be the Catholic church unless you have the first marriage anulled. From what I gather, you must also refrain from taking Catholic communion if the marriage has not been anulled. If you have questions, please ask your priest.
In response to the post above me, please do not say that my faith makes no sense. Either you do not understand it, or are unwilling to live by its principals, but that does not mean that it is senseless.

In order to do say you must get your marriage from the catholic church annuled. It is not that easy , either.

If you're catholic, you're not allowed to do anything that resembles real life.
So I think you'll have to make a choice - be married to a faith that makes no sense or be married to a woman.
Hint - woman and man are meant to be together.
