Most butchers I know learned on the job. I butcher my own deer and did get pratcial pointers from butchers. However, after helping to butcher cold meat for a few hours on Saturday, I decided it was not the work for me. Hands got so cold, I got a headache.

Not as easy as it looks if you're doing it for 4 or more hours a day.

Not really you learn how to cut meat on the job.
