Magic Kingdom must-rides:
Space Mountain, Splash Mountain, Thundermountain Railroad, the Carousel of Progress, The Country Bear Jamboree, It's a Small World, Buzz Lightyear Space Ranger Spin, Pirates of the Carribean, The Haunted Mansion, and The Enchanted Tiki Room: Under New Management.
Souvineers: There is a really cool Tinkerbell shop just under the Fanasyland / Liberty Square bridge (on the Fantasyland side). Also, after the Pirates of the Carribean ride, there is a gift shop that sells copies of the iron keys that the dog holds in his mouth (from the movie and the ride).
EPCOT must-rides:
Test Track, Soarin', Honey I Shrunk the Audience, Journey into the Imagination with Figment.
Cool souvineers: Pretty much any of the country pavilion shops. (My personal favorite was in Japan. You could buy a kimono, wooden shoes, and a bonsai tree all at the same store!) For a more "Disney" souvineer, check out the Figment hat sold only at the Imagination pavilion.
Disney MGM must-rides:
Twilight Zone Tower of Terror, Rockin' Roller Coaster featuring Aero Smith, Star Tours, Beauty and the Beast (stage show), The Great Movie Ride, Muppet-Vision 3-D, and the Little Mermaid (stage show).
Cool suvineers: There is a kiosk at the back of the park (near the exit to the Backlot Tour) that sells "Binford" merchandise from the ABC TV series "Home Improvement". Also, check out the "Mouse-kers" that are sold at the Backlot Tour's gift shop.
I'm not really that familar with Animal Kingdom, but have heard that Expodition Everist is a must-ride.

I've been to Disney World five times and I love it. You should do everything. These are the main things not to miss:
Magic Kingdom- Small World, Haunted Mansion, eat at the Crystal Palace, get a caramel apple at The Confectionery Shop on Main Street USA and you must buy mouse ears with your name on them.
Epcot- Test Track-Planet Earth -Soaring
Animal Kingdom-Safari, Kali River Rapids,Mount Everest(I didn't do this ,but my son in law loved it).
MGM- The Great Movie Star Ride
A word of advice: Disney is busy most of the year, and you may have to wait in some long line. Just go with the flow and don't stress. Disney is for the people and they bend over backwards to ensure that you have a good time.

Dont buy anything less than a 5 day park hopper pass.
Do not try to see all the parks in 5 consecutive days try to put a break day in between 2 days. Dont forget MGM Studios park. Ride everything from simplest to fastest. Magic Kindom ride Space Mountain, Splash Mountain, Thunder Mountain, Haunted Mansion, oh just do everything

everything!! the best rides are at magic kingdom and animal kingdom. definitely check out the thunder mountain railroad, splash mountain, and space mountain! for souviners, you should get pins and start trading. its a lot of fun, i know its sad but i sometimes get more excited about pin trading than going on rides! you can get pins pretty much everywhere in every park. for food, definitely try the sci-fi dine in, in MGM. it was really good. have fun!!

Best souviner: professional photos! You can get some fun custom photos at the Kodak What if Lab in Epcot, it's right when you exit the FIgment attraction (its a good one). I got one of me and my bf, we picked Finding Nemo, and then had to lay on this bench and act like we were swimming. They cut and pasted our photos into the picture! It's sooo cute. Best attractions-they're all great. Start early, stay late, and see them all. Take a map so you dont miss anything and use Fast Pass so you dont wait forever in line. Best restaurants: see reviews for all restaurants at allearsnet.com it's very helpful to see what people thought, the menu, price, etc. My must eat at places are: The Polynesian Resort "ohana" dinner (you can go to hotels that you arent staying at), Sci-Fi in MGM--best slow cooked in Coke, no fat on them RIBS!!! yummm!!! 50's Prime Time in MGM has great meatloaf and a fun atmosphere. Flame Tree in Animal Kingdom-ribs, and PIzzafari-great breadsticks. I recommend the buffet places and character dine. Best breakfast for that is Grand Floridian resort, and Polynesian. Do your research!!! go to allearsnet.com and disneyworld.com learn all you can. I've went 2x already, researched tons, and i still learn new things and that i missed things -like you can snorkle for free at Typhoon Lagoon, it's just out of the way-secluded-and i MISSED IT!!! Their two waterparks are tops in the world! Dont miss them! about 3 hrs for each is a good amount of time. Stay at a Disney Resort!!! A must for a hassle, worry free, benefit to the parks.

If you go to Disney you should try to see or do everything at least once. here are my personal favorites.
Animal Kingdom - Expedition Everest and Animal Safari are must sees
Epcot - Soaring, world showcase, test track are must sees
Magic Kingdom - See everything
Disney Studios: Tower of Terror, Rockin Roller Coaster, Fantasmic are awesome

Go on It's A Small World a thousand times or until you are going crazy from the song [just kidding]. Go on as many rides as you want, eat as much junk food as you want, and have a great time!
