I'll go with Honus Wagner. Ty Cobb has better career numbers but he played for a lot longer than Wagner and he played for quite a few years after the Dead ball era was over.
Also, Wagner and Cobb went head to head in the 1909 World Series and Wagner really outplayed Cobb in that series.

Without a doubt it is Ty Cobb.

Has highest career AVG
9th on OBP
2nd in Runs
2nd in Hits
2nd in Singles
4th in Doubles
2nd in Triples
5th in Total Bases
7th in RBI
4th in Stolen Bases

Cobb ranks much higher than Wagner in all of those categories.

Shoeless Joe Jackson

I'd give the nod to Shoeless Joe Jackson.

Even though he "cheated" in 1919, and was kicked out, his stats are unbeleivable.

Wagner is a close second.

I'd take Wagner, but Cobb is just as good a choice.

No doubt there'll be some praise for Joe Jackson.

Ty Cobb for his numbers and the way he played the game. He treated the opponent like the enemy and played to win at all costs. I would've loved to see baseball played that way.
