Yes, once you've completed the other missions in the stage, you can get the final star by collecting 100 coins. Which means getting all the red coins too in additional to collecting the normal coins. (The red coins are worth more)

No. You only get a star in each level by getting all of the red coins.

I dont know but you do get a shine sprite every 100 coins you get on super mario sunshine
