I have searched for the past 45 minutes with the only result that give a description of an amount but not a total amount.
Each city and town probably done individually would give a total but time is a factor.

New Delhi has a CONSPICIOUS amount of roads named after him. In all probability there has never been an actual count .

India's new names are not just restricted to cities alone. A number of roads, railway stations, airports and public places have been renamed. The capital New Delhi is conspicuous for the number of roads named after prominent politicians notably of the Gandhi clan. But most Indians still refer to places and especially roads by their original name. The 'Father of the Nation', Mahatma Gandhi holds the record for having the most number of roads named after him.

This can not be answered in numbers, because it is countless. As somebody has said in a poem that Gandhi has become very cheap, he has become road from a man. It looks like a fact.
In India all the towns of District level and Taluka level have one M G Road. Most big villages have named their main road as M G Road. The next choice for name of a road is usually a local leader or famous place.
