I know that the voice of chef on southpark left because of the racial content and such but did they have him die or something?

Issac Hayes quit the show either due to the Scientology episode or because of an apparent stroke that he suffered. There have been different accounts given both by Issac Hayes and Matt Stone over the course of several interviews. Anywho, Chef just stopped appearing in the show when Hayes left following the "Trapped in the Closet" episode about Scientology. In the episode "The Return of Chef," Chef reappears all of a sudden after the narrator tells everyone that he had joined the Super Adventure Club. After a while the boys realize that he is acting a lot different than normal because he is trying to have sex with boys instead of women. The boys learn that the Super Adventure Club is actually an adult group that believed that sleeping with children would make them immortal. They bring Chef out of his trance at a strip club, but another member of the SAC convinces him to rejoin their group. On his way back to SAC, Chef falls off a bridge when it is hit by lightning, and then he goes through a series of brutal injuries including having his face ripped off and his body ripped in half before he is accidentally shot by the SAC member, and he poops himself leaving no doubt that he is dead according to the boys. At the end of the episode, the SAC members bring Chef back to life similar to Darth Vader. All of Chef's lines were taken from previously said dialogue in previous episodes because Issac Hayes wasn't going to come back to the show.

He quit because he was a scientologist and didn't like it when scientology became the butt of the joke on the show. They killed him off on the episode where Chef joins the Super Adventure Club... I think it was called.

He left because he did not agree or rather did not tolerate the makers making fun of scientology.
