If I am going to a sight seeing holiday then $$ hotel. I will only need it to sleep anyway. The rest of the time I will be out taking thousands of photos and eat and drink and shop and sight see.
If I am going to a resort where I will just stay and relax and do nothing , then yes $$$$$ hotel and get pampered.

I would pick $$$$$ hotel because going on a holiday means to relax and enjoy and if you are doing that so you must see your full comfort which can be provided by a costly hotel

If I have the extra money I would like to spend it in a 5 star hotel but if I don't then 3 star hotel will do fine for me.

Why so extreme on either end? You get a lot of value with $$$ hotels. Why limit yourself to a roach motel with lower standards? On the other end, why pay a crap load of money for a $$$$$ hotel, when it is mostly a place where you sleep but not where you spend the day?

IF I could afford it I would go to the nicer more expensive one, get the whole spa treatment and all the extras in the room:)
