Rocketa 150 is great! Around here, they are about $1500. I'm not sure about riding it that distance, but I guess it would work. Speedometer shows it will go up to 75 mph.

If your plan is to go across country on a moped, then the Yamaha Vino is a bike you can get support for everywhere in this country.
Some Vespa dealerships are sales only and don't have a service department. Not that all Vespa dealers are this way,but Yamaha dealers have a better parts supply chain and trained service personal on staff.
I would personally go with the Yamaha Vino over the Vespa. Both have the classic scooter look of the Vespa, but in my opinion service after the sale is what tips the scales.

From time to time you get to see the spirit of exploration emerge even in dark times. Anyone can ride cross country on a Harley or other MC/Scooter, but on a moped, that takes real guts. This question proves the American spirit is alive and well today.

Those are scooters.
A moped is a motorized two wheeler with pedals you can pedal like a bicycle.

Any scooter over 250cc would be adequate.
A smaller sized one would be over taxed riding at constant high speeds, the light weight will cause fatigue more rapidly fighting side winds, and it wouldn't be fast enough to ride on highways as they only go 30mph.

That link for that yamaha Vino is a good moped but for a long trip like that you should probably get one of those bigger touring ones.

I am calling Shenanigans on you for this question Diane! You can't be serious unless you have a death wish or six months to spend on this trip. On secondary roads,at 30mph, you will need extra gas tanks, tools, parts, traveling only in daylight during good weather....have I talked you out of it yet?
