veterinarian - often who works for an animal shelter and can be an expert witness documenting abuse
and there is always a need for someone to lobby for stronger animal abuse laws (but you probally wouldn't earn a living doing just this as a lawyer-it could be a side project)

On the T.V. channel, Animal Planet, there is a show about animal police!!!! it is a very cool show about cool people saving animals.
