i LOVE to cook. i'm an expert at taking what i've got and just whipping something up on the spot! i think my best dish is probably green chile chicken enchiladas... i make 'em super spicy, and broil the crap out of them so they get all brown and crispy... yum! it's hard for a white girl to get her mexican food chops, especially here in new mexico, but i've done pretty well for myself.

Italian chicken. Put chicken breasts and an entire bottle of Italian dressing over it, and let them cook in the slow cooker. I serve it over rice and drizzle the dressing on the rice. (Most of the dressing I throw out--who needs THAT much fat?)
