It really depends on the experience of the installer. I have seen one guy lay carpet that did a great job. He had about 30 years experience.
If the guy has been in the business for years, go for it and ask for a guaranteed free restretching if needed.

one person can do the job by their self provided they have the tools to do the job, i have done this myself.
i take it your trying to keep the cost down, i don't know if you're capable of assisting the handyman or if he would even want your help, but sometimes it is helpful with two people, especially when doing large areas, or just getting the carpet into position to start the job.
consider first the path to bring the carpet in, are you going to end up with broken items.(carpet is 12'6" long) the hardest part to doing carpet is getting the room empty and ready for the carpet, then next is getting the carpet into the room. once these two obstacles have been meet the rest is relatively simple.
turning, pushing, stretching, and joining(gluing) can all be done by one person, usually better this way, although it does take a little more time. but yes you can have a very beautiful and professional looking job from just one person.

It can definately be done by one man providing that he knows what hes doing. But, my concern would not be what it looks like the day hes done but more whats it going to look like in a year when the carpet stretches and wrinkles because that 1 man installer couldnt get the carpet stretched good enough.
Seriously, I would hire a pro instead of just a handy man...its well worth the extra money to ensure that its done right.

One person with the right tools can do it but, give him a hand or a little tip on the side because it's heavy, hard work.
Someone that knows what he's doing should be able to do it well.

Of my own personal knowledge it is definitely a two person job at best.
