On my dragon, you can't sit behind the wings because you would be swept off with each beat. (Calling each wing thrust a beat is actually misleading. The wing is actually stroked in an elliptical pattern--high up towards the front to capture as much air as possible, scooping it into the vane by curling the front part of the sail around and over it, as you would cup your hand to swim. Then thrusting downwards with the whole of the wing to gain lift from the extra volume of air under the wing, and back to move the dragon body forward. Then repeat.) And there is no place to hold on as the vaning of the wing is continuously undulating between the shoulder and the back legs. As I said, one would be swept off if they were to try to sit behind the shoulder.
The very best riders are ones that don't get motion sick, as well as those who have no fear of heights. As the wing reaches forward, the body of the dragon drops some few feet in the air, as the wing cups the air and pushes down and back, the dragon's body rises and thrusts forward. This is a continuous motion as the wings beat--the only relief coming when your mount goes into glide mode.

It depends on the species. If it has a long neck you sit in front, a short neck you sit behind or between the wings.
