I think she would have put all that stuff in the epilogue and she did originally but it just became too long and readers wouldn't have enjoyed it so she kept it to herself and will hopefully put out an encyclopedia in the future that tells us more

Okay, I understand what you mean, but it doesn't bother me too much. You see, when you write a story, you have to know your characters and (in the case of fantasy with made up worlds) the place they live inside out. But at the same time, you can only fit the information that fits well into the book and compliments the plot. If you try to fit everything, you'll just bore the readers with a bunch of needless details or useless scenes that only slow down the momentum of the plot. J.K. Rowling could not fit all of her information into the Seventh book simply because it wouldn't all coincide very well. She did the right thing in saving it for the interviews.

She has back stories for all of the characters. There is no way she could have written it all in a single book. However there is a new rumor that she plans to publish a Harry Potter Encyclopedia and include all of the extra information.

She's going to write a book about it later. If she would have put all that in it would be twice the size! Plus if she's going to write some of it it will bother other people that she didn't write something else. Give the woman a break! She's only been working on Harry for 20 years!

She did originally write it, but decided not to print it because "it would add an air of finality to the series".... She did it on purpose, so don't cry, all the answers will be availiable in due time.
