"All Along the Watchtower" by Bob Dylan.

I think there's a reason why it has been covered so many times, and why it was still turning up on albums in the 70s, 80s and 90s, and I do not think it was covered so many times simply because people in general know the song. I think it's just a great song, sort of mysterious, which asks some interesting questions about life, but leaves them unanswered, so the listener can interpret it how they like.

"If I needed someone"

It was written by George Harrison, but was covered by others. The style and theme of many songs ties them to an era. This song isn't tied to the 60s, and a cover made today could be a hit again.
