My husband has been known to sleep on his back with one or both of his arms straight up in the air, curious why he might do this, I guess he always has.

Every night? Strange - I've woken up with both my legs sticking straight up in the air a few times - I didn't think much of it since it doesn't happen very often. If it's really affecting you/him I'd go see a sleep specialist.

He wouldnt be able to stay like this all night.

We have stages of sleep, in REM sleep (where we dream) we are partially paralysed and dont have enough muscle tension to maintain holding a limb up.

that is really strange. I would ask a doctor/ sleep specialist.
