Start with a hay appetizer (as a joke). It'll make for enough conversation that they'll have eaten half their plate before they notice the foul stench of dead animal.

No. That's disrespectful to my guest's moral beliefs. Actually, something like this happened to me. When my friend first became a vegetarian, I invited her for dinner and made a lot of meat dishes. I made lasagna with meat and a chicken casserole and when she asked me about it, I fully apologized to her and told her that I completely forgot she was a vegetarian. I've made sure not to make the same mistake since. I was so embarrassed!

I think you should tell them..chances are they gonna ask for the recipes of your bean stew..you know what kind of conversation we women have..then ask them if they want something else if they said no to the beef stock..it's a li'l awkward though..

Well..... I've been a vegetarian for 22 years and I can taste it immediately if food is prepared with animal stock. Best to make a fresh batch toots.

Be honest, and say you completely forgot. Have some other dishes prepared that could be considered "main" courses and/or keep the one for yourself labeled and make a new one for him/her. Good luck for your meal preparation! If you didn't want to be honest, you wouldn't have asked this question...

They won't even notice. Have you noticed that vegetarians taste just like chicken?
