Hmm, I usually think of "sleepers" as different from being "undervalued." If they go in the top 5 or so rounds of the draft, they ain't sleepin'.
For instance, Travis Henry and Cedric Benson have the potential to be top 10 or even top 5 backs, but everybody knows about them already, just like Frank Gore last year. They just thought of him as a fair to middlin' RB2. I also like TJ Housh mentioned earlier - w/o CHenry and w/CPalmer at 100%, to be possibly Reggie Wayne-like.
As for later rounds, where deep sleepers may go undrafted but still be worthy of a starting spot, I like GB and SF defenses. Jerious Norwood, Brandon Jackson, Kevin Jones (could go off if he recovers well from surgery) and Freddie Taylor (easy sched) all went undrafted in one of my leagues. And Drew Carter, Drew Bennett, Kevin Curtis, Arnaz Battle, Wes Welker (PPR-stud), and Mike Furrey are all experienced recievers for redraft fliers. Finally, don't write off Daunte Culpepper in Oakland or JP Losman in Buffalo as late-round worthy sleepers.

In the late rounds you might wanna take a look at Kevin Curtis in Phili. He comes from a solid passing team and could be a nice deep threat for Mcnabb. Otherwise, I've been adding McMicheal in STL. Bulger has never had a goto TE and kind of reminds me of Green and T Gonz. in KC a couple years ago. Don't go there till 9th or 10th. Good Luck

Roy Williams, Jamal Lewis (I think), Norwood from Atlanta has been dropping in a lot of drafts. Which doesn't make much sense considering he will get all of the carries with Dunn out.
Laverneus Coles (excuse the spelling if its wrong) is a solid reciever I believe he had 91 grabs last year. You can get him pretty late.
Andre Johnson and Donald Driver are worthy number 2 recievers who you can get late.

Here are some actual sleepers (for those who are calling the likes of Norwood, Br. Jackson, and Lynch sleepers):
I don't forsee any real sleepers at the QB position, but the closest thing is Jason Campbell, who will put up good bench numbers as a Backup fantasy QB...
Mid/Late round RB: Mike Bell - it's Denver & he should at least reprise last year...
Mid/Late round RB: Leon Washington - T.Jones is fanastic, but the Jets will look to keep him fresh, enter Neon Leon...
Late round RB: Call it a gut feeling, but I think Ronnie Brown won't play 16 games this year - therefore his backup - be it Lorenzo Booker or that guy who's name escapes me right now - might be a sleeper (or he might be sleeping on the sideline if Brown proves my gut wrong...)
Mid round WR: Santonio Holmes - particularly if your league give extras for kick return yards...
Mid/Later round WR: Mike Jenkins. Even though Joey Harrington will be heaving the ball, Jenkins has proven he can lead & Joey will throw a little more than Vick...
Later round WR: Eddie Kennison/Dwayne Bowe - Somebody has to emerge to catch balls in KC...my money's on Bowe, but Kennison slipped to the 13th round in my draft - which means he might be a steal in yours too...I don't think Sammy Parker will prove to be the go-to guy...
Late round Rookie WR: Jacoby Jones. Somebody will have to step up to accompany Andre Johnson in Houston. Why not Jones?
Late round sleeper at TE: Robert Royal will catch more balls in Buffalo, so should D. Martin in Miami (unless the acquisition of Courtney Anderson cuts into his numbers), and I wouldn't be surprised to see Zach Miller do well in Oakland...if you choose to punt the TE position and not target Gates, Gonzo, Crumpler, Shockey, or Vernon Davis early, these guys should be available at the end of your draft...
Sleeper Defense: Go with the Bay - Oakland and SF will be surprises that can be snagged well after the elite defenses...
Kicker: Close your eyes and throw a dart at a map...closest city = possible fantasy sleeper...
