Bring your hand from behind its head and push the top of his shell. (he is usually looking straight at you to nip you) That stops him walking to possition himself for a nip. You then hold the shell on either side just above his legs and hold him with nippers away from your wrist.

I'm wondering why you pick them up? I don't pick up crabs but then I don't live near a beach. My son had hermit crabs long time ago, he was always getting pinched. Just don't pick them up.

The best way is to pick it up by the shell, it doesn't have any chance of pinching you that way, be sure to do it from behind the crab.

Move your hand in from behind and grip the top of its big shell. Like picking up a tortoise, kind of.
Or maybe just watch the poor things, instead of always trying to hold them. They don't enjoy it.

sleep with skanky people...you'll pick up crabs sooner or later.
no...seriously...pick them up from behind, holding the back of their carapace. Few claws can reach behind the crab to pinch you there.

You should hold the back of the crab.Which the crab's claw would not have gone that far.

Use one of those circular nets that you can toss on top of the water. They have metal beads on them to sink fast.
