there was this cartoon where aliens are blue and they capture human beings and use them to fight against one another. Later on one human escapes and takes their learning device where he learns from it. He finds other humans and they start to learn and pretty soon they fight against the aliens and win. What is the name of that movie?

It's an animated cartoon, the humans have collars around their necks so if the humans try to escape they can bring them back, and there is a small clip shown on the movie The Cell.

...you're talking about the very surreal and bizarre ground-breaking 1973 science fiction fantasy from France, entitled "Fantastic Planet"; although the film itself has never been emulated, the images in the film, have been quite influential by the artists of early-to-late '70's rock band albums, produced by Yes, Journey and Boston.
...incredibly enough, the fact that this film has never been successfully duplicated, might just be taken to the test soon, as reportedly, a remake is in the works for 2008....supposedly a symbiotic mix of live action and CGI.
I guess we'll eventually see for ourselves; stay tuned...
