It's true, they are not just going to hand operational material over to what might be competition.
However, every public company listed on the PSE has to file an annual report to stockholders. This is public information. You might be able to contact them directly for a report, or you might be able to get a copy from one of the exchanges.
I don't know if they are listed in Makati or Ortigas, but maybe someone else will know. This report will not have the complete organizational chart, but will show the officers who sit on the board, company forecast for the year, and how they fared.
This is also an International company, so you could see if they are listed on the New York Stock Exchange, where much more information is required in the annual report. Just be clear the you are not looking for the quarterly report, but the "Annual Report to Stock Holders."
This will not be online, but a copy will be on file in every public library in a major US city. If you have a friend over there, the reports are free in the reference section, and there is a Xerox machine only a few feet away.

The Shangrila Hotel group is a corporation. They have competitors in the lodging indstry. As such, only certain employees are privy to this type of information.
In short, if you want to see it, you better get hired by the hotel--preferably in an executive or HR capacity. However, as an employee you are restricted from disclosing the information contained within the chart to anyone outside the corporation.
Ah, what a dilemma.
