Napoleon in Egypt, or the French Revolution, but focusing on these people while showing everything thats happening around them. Try not to get Hollywood to screw it up like they did on many movies.
But if you want some story that hasnt been recognized yet lets see. China during the ming dynasty or mongol period doesnt seem to be in many movies. We could have another samurai movie, or a thriller involving the knights templar and the church(not specifically the catholic church). A movie about mesoamericans, the inca, and the spanish inquesition sounds interesting too. The war of the roses and puritan revolution, maybe some english rebellion, or another macbeth. Shakespeare may be fiction, but his plays are great.

The question of course is what really qualifies as not having been recognized yet. There were a lot of good historical movies made during the 1950s and 1960s. My own hunch says that, to look for a great story that still needs to be told, you need to look for a non-European source.
However, if looking for a European source, I can't seem to think of a good movie about the French Religious wars and the rise of Henri IV in the late 1500s. Given the competing roles played by many of the key French Families (and the influence of the women behind the scenes), it could make an interesting story.

Yikes - - - your question is good but methinks misunderstood. Up next at the multiplex is the story of Elizabeth Tudor the 1st and how she dealt with the Spanish Armada. A sequel to the earlier Elizabeth with much of the same cast, the incomparable Cate Blanchett and Geoffrey Rush, 'The Golden Age' is due in October so plan on an Elizabethan Gown for Halloween.
AS FOR MY THOUGHTS // // // hmmm, what would you be in the mood for? A starring role for Jason Alexander, as young awkward lawyer John Adams in America in the 1760s. John is an odd duck; from the poor Branch of a noted Massachusetts family. John is a young Lawyer, boldly launching his career despite being balding plump and socially clumsy. John means well but he can talk way too much and is often out of touch with day to day reality his reality being that of dreams wrap in his intense study of Greek & Roman History.
What John needs is the right woman and it happened to be one of the brightest prettiest most intelligent of all Colonial women. Abigail Smith entered John's life and their courtship and marriage make for a compeling movie. In the modern venacular, Abigail Completed John and the results were Spectacular. If it were not for the Courtship of Abigail & John then America might not have been born.

The Acadian expulsion of Nova Scotia by the British.
When the British demanded Acadian support in the war against France, the Acadians refused (1755).

England, 1348. The Black Death sweeps across Europe with powerhouse speed proclaiming itself history's deadliest epidemic. But then, in a crucial fourth down play, all-star receiver Willie Noble of the '69 Colts flips past the free safety for a spectacular game-winning touchdown in the final seconds. Congratulations, Willie Noble, for another Great Moment in the Black Plague

~Several ideas come to mind but if I laid them out here they wouldn't fit the requirements of the question. I mean, once I set them out here they will no longer constitute stories that "haven't really been recognized yet". I suppose if you want to do some creative writing, you'll have to create. With such a broad topic, your problem should be to narrow the scope of the story, not to choose which story you want to tell.

Your question is a little too general. "Before the 1800's" covers all of human existence except for the last 208 years!!
