I'm about to beat the game but I still want to do sidequests and hunt monsters. Can I continue to do these after beating the game?

Yes, on my first playthrough I rushed to beat the game, and then went back and finished all the hunts and getting all the espers. You can't save the game once you leave for Bahamut to fight the final battles. You can't save the game after beating the game. So you can continue on your save before you went to the last battles. Just make sure you save the game before you leave for Bahamut!

unfortunately no you cannot. What I did was save right before the final area, then beat the game to satisfy my curiosity. Then reloaded and continued side questing as usual.... theres no different ending or completion percentage or anything, so you wont miss much.
