Your choice. If you let them turn red then they can be dried into ristras. (they don't dry quite as well as the bigger chile for ristras) Or you can smoke them with flavorful wood smoke to make chipotle chile.

No they do not have to be red, They will be spicer if you let them turn red. Pick them off as soon as they are the size and state of maturity you wish because the plant will keep producing if you remove the mature peppers.

Nope. Green or red is good. I look for the little beige lines (they look like cracks) which means they are mature. But really, you can pick it anytime and it will still be hot (Anytime after fruit is 2" long).

Hi!
I am from Mexico and I have seen green and red picked jalapeños... so I guess it does not matter. I can tell you... the green ones usually are hotter (in my experience).
