why might my knuckles be darker than they rest of my hand?

the back, palm and the spaces between my joints are all white but the joints them selves are dark brown...shouldnt the entire hand be dark brown?

This is where the skin doesn't exfoliate by itself all that well. You get more old skin in that area than anywhere else on your hands. Try washing your hands with a brush every evening.

Do you wear gloves that are too big for you? Or even if it is snug, it might be chafing on the knuckles and then basically, bruising them and giving it a darker color.

Try exfoliating them. If it doesn't go away, it might be a genetic trait. Like the way all the knees of my siblings (including me) fold differently, unlike other people.

more skin is less of an area, so it appears to be darker.
