Get a new e-mail address.

There really is no other way. If you respond to the junk mail, you're only affirming that not only are you GETTING the junk mail, but you're READING it (enough to click the 'stop sending me this crap' link).

You should always have two e-mail addresses: One for sign-ups in contests, surveys, message boards, whatever. Basically a 'throw away' e-mail address you can replace any time, and an e-mail address you use for personal correspondance.
