The way your question reads to me is "how do I commit odometer fraud?" The digital mileage is stored in the instrument cluster. The dealer has service tools to set the odometer to the actual mileage, these tools are actually computers that interface with the OBD2 and / or directly with the cluster. If your cluster is is damaged you can find a replacement through an auto dismantler who will usually record the mileage prior to removal make sure it matches your current mileage. Make sure the replacement interchanges (engine, transmission etc) with your current cluster small features like traction control, abs etc are simply twist in bulb sockets.

Liquid crystal display unit in the spedo cannot be tampered with no matter how many parts you put on your car. It is illegal to alter the mileage. Modern Speed and Mileage displays are computers in there own right and send information to the Transmission control and Engine control and even tell the Body control to lock the doors at a preset speed.

You cant, its illegal and quite frankly, very dishonest. Hence the illegal part.
If you mean TRIP ODOMETER, you push in the little knob on your gauge cluster and hold it until it changes to zero.

I believe that's as illegal as can be. If you are in the U.S. and doing this, you will most certainly get caught.
