Because we only notice movements relative to our own movement. We are sort of following along the sun's path, we can only see our own motion relative to the sun. Hours, Days, Months, Seasons, etc.

Our frame of reference is an object that is orbiting around the sun. We cannot easily see any movement because the stars move only a tiny amount in our skies in the lifetime of humans. They also mostly move together. Only a very few stars are relatively close.

The movement is well known and documented. Get Starry Night Pro, locate on or near a different star, watch the sun move.

The Sun moves slowly, smoothly, and steadily, so we have no sensation of movement. If you're in a car moving exactly 100 km/hr along a straight smooth highway, you have no sensation of movement. You can only detect it if the car speeds up, slows down, turns, or the road gets bumpy.

we only have the background stars to compare it with, and they are very far away and the sun is moving quite slowly in comparison. astronomers can measure it but it's very small. sort of like watching trees grow perhaps.

probably you did not know that earth take one year to revolve around the sun!!! that's why we have day and night...and also time all over the world are different too........
