First weekend in September go to the Birdsville races in southwest Queensland. It is an amazing experience and lots of fun. 10-12 August is the Mt Isa Rodeo, the biggest in Australia with entertainmant and events from now til the end of the rodeo.
If you go to Mt Isa, take a trip north to the Lawn Hill national Park. It is amazingly beautiful. Go up to Normanton on the Gulf of Carpentaria and take the ricketty old train to Croydon. I think it departs Normanton on a Wednesday morning and returns on the Thursday. You stay at the Croydon pub overnight.
Go out to Winton between Longreach and Cloncurry and make a trip 200km west to the dinosaur track exhibit. It is well worth the visit if you are in the area. Two or three times a week, the Tattersall's Hotel in Winton flies fresh fish in from the coast. If you are there on Fish Nght, expect an excellent dinner - and they have a superb wine list too.

I would definitely go to the inland..... Winton, Longreach, Cloncurry to see the museums that tell about Aussie history. Or go further west to see some great Outback scenery.
