8600 should be better. The naming scheme is as follows:

The first number is the generation number. 8th generation is more recent than 7th (ATI uses a similar scheme, they are on X for 10 and X1 for 11). The second number is what determines low end (0-3), midrange (4-6) or high end (7-9). So don't really worry much about letters after the numbers and/or amount of MB video ram.

The 8600 is better by far. It destroys the 7300 GT in performance. Here's a page comparing the technical specs of both

In essence, the 7300 is not comparable to the 8600 at all. The 8600 is too good. Also, the 8600 supports DirectX10, which is what most games coming out in the next year or so will use. It gives much better graphics than the current DirectX9. The 7300 doesn't support DX10

The XFX 8600 is 184.99 on newegg.com (best site for computer parts)

I would recommend getting the eVGA 8600gts 256 MB card for $159.99 at http://www.newegg.com/Product/Product.aspx?Item=N82E16814130084

Same card, but cheaper and comes with a great lifetime warranty.

The 8600 is far fa better.
If you look up the 3dmark scores, ANY 8600 is TWICE as powerful as the 7300gt. The 8 series also has DX10 support, which is lightyears ahead of DX9.
The letters actually do make a difference. The gt models are much more powerful than the regulat models, and the gtx and gts are almost double the power of the regular models.
The 8600gt runs for $110 and up.
The 8600gts runs for $160 and up.

7300 GT is just a 8 pixel pipeline card w/ 5 vertex shaders. The 512Mb version is slow because it is just ddr2 videoram. The 256Mb ddr3 version is actually faster. 8600GT has 32 stream processors and ddr3 v-ram clocked from 1.4Ghz to 1.7Ghz.
