A couple years ago, I walked in on my girlfriend with another woman and this was two years ago. She made up and I forgave her...but yesterday I got home early and heard noises. I quietly snuck in the room and saw her and another man. I didn't say anything, I just left for a few hours. We have two amazing kids and I don't wanna ruin their life.

I would have grabbed my camera, shoot picture, and ask questions later. Seriously, you have to confront her on this. Then find a good counselor. Millions of marriages have survived this, but you need answers, and she has to face her issues.

You are teaching the children that a man should let a woman treat him like crap.
She is teaching them that marriage vows mean nothing and that a wife shouldn't respect her husband and her children's father.
So....how is that NOT already ruining their lives?
MAKE HER ACCOUNTABLE. Get her into marital counseling and from now on, her life must be an open book. That means if you want to bug her phone, it's okay with her. If you want to have someone follow her now and then, it's okay with her. If she doesn't like that, kick her to the curb. Your children deserve better.
