Legal seperation is a court ordered document.
seperation is just a decision between a husband and wife to have some time to decide if they really want to get a divorce or not.

The fact that without it being legal one of the spouses can clean out the bank accounts and take off leaving the other one with all of the bills and there is nothing that spouse left with the bills can do about it. A legal seperation basically "freezes" all of the marital assets so that neither one can take anything other than what is needed to take care of the household.
Dating is STILL considered adultery because legal seperation is NOT a disilliusionment of marriage you are STILL married.

Legal separation involves filing for separation (or separate maintenance) with the court. It requires an attorney, and is usually an agreement of who pays what until a divorce settlement can be reached.

If you have an attorney and go through legal proceedings to be separated, then that is a legal separation. If you just leave your spouse on your own will, but nothing has been done yet legally, then it is just a separation.
