Its not as simple as unplugging a connector. That chime is integrated into the functions of a multiplex unit for all interior controls and cannot be shut off as it is a safety system.

No dealer will try to bypass it because of the liability issues--if you're not wearing your seatbelt and you get injured the dealer would be liable for disabling the warning system whether you asked to have it done or not.

if you just go pulling connectors, the seat belt light on the dash will stay on all the time (which your already know). You will also trigger the SRS light that will stay on all the time because a sensor in the seat belt buckle is used as an input to the airbag system. Whenever the SRS light is on, the air bag system is disabled which means that the air bags won't work in a collision event. So you might be able to get rid of a chime by pulling connectors but you'll turn on two warning lights and lose the protection of the air bags.

You might not like the chime, but its easier to live with it for the 5 seconds than it is to try and shut it off.

hope that answers your question

Just put on your seat belt.
If you must disconnect the alarm most vehicles have a switch in the seat belt buckle. Look under the seat where the seat belt buckle is bolted on and see if you can find find the wire that is hooked to it and un plug it.
