I like a lot of salads for lunch. So make sure you have a variety of those on there, like Cesar, chicken cesar, ham, house salad, fruit salad, and so many more. Salads are meant to be fun, so just open your mind and throw in a bunch of fruits and veggies! Another thing I like on lunch menus are lots of wraps. Stuff with high protein so I can get through till dinnertime. To make a menu, you have to know what style of food you're going to serve. Mexican, Indian, Chinese, American, what? That's all up to you.
Lots of luck!

What I like to see is a varied menu w/ lots of fresh ingredients. None of those canned veggies or preserved bagged salad (tastes awful!). In summer lots of salads. In winter fresh homemade soups. Other than that the usual fare with a slant towards healthy food. Healthy food is hard to find in most Diners. GOOD LUCK with your endeavor!

What kind of restaurant?
If it's a sea food place, make sure you have chicken and burgers for the kids who hate sea food! Also, have a WIDE WIDE variety of things, because there is nothing I hate more than walking in and seeing 5 things on the menu.. It's like, "Yuck.. Yuck... Maybe.. No. nope." And I just leave.

For my lunch, I would eat a good sandwich with: lettuce, tomatoes, cheese and ham. Maybe fries and onion rings as well.
